Ok so no splitting or making it thinner just cut into short "chunks" correct? I will give this a whirl!! Ive seen some talk about using hotter fire for green wood should I use more charcoal get lots of hot coals or just do like I normally do?

Ok I am doing a big smoke tomorrow morning with 7.5 lbs of pulled pork and 2 racks of pork ribs. I Have a friend with apple trees and he said he would bring me some apple wood, Great! However he came over not long ago and it was freshly cut from the tree wood averaging around 2.5 inch diameter...

Ok heres another progress report. (Hey Im sitting around tending the BBQ and thats it I need something to occupy me! lol) I have foiled my VERY lovely, bark covered dark piece of pork heaven and placed it back in the smoker. The ribs are looking good but some are still kind of light and lacking...
Ok so Im impatient lol. And because when I smoke it has a tendancy to take longer than expected I decided to throw my ribs on now. Plus I figure worst case scenario they sit in foil in the cooler and just get better while I wait. So here they are rubbed and going on.
