    Cant help you on your particular smoker.  For the butt it's done when it's done.  You really need to measure the internal temp and when it reaches 200 deg or so it's done.  Time will also depend if you are going to foil or not.  A rough estimate for a 7.5 lb butt would be anywhere from 8-14...

    Nvm, there would be no heat if the pellet's were not in the hopper to be added as fuel.

    I have always had a good experience with the ribs from Costco.  I wish they carried packer briskets at my Costco.

    I have the older mes 30 and after doing a few mod's (pid, mailbox, etc) it has been great.  Wont get any smoke ring with an electric though.  I have read many people having issues with the newer mes models.  Might want to check out the smokin-it line of electric smokers as well.

    Get yourself a good digital thermometer such as the mav 732.  The mes is notorious for displaying a very inaccurate temp on the controller.

    After seeing your video i bought a cheap wagner heat gun today.  Had an issue at first with the second row of pellets starting to ignite which im sure was due to me having to much fun with the heat gun.  Worked really well to get the amnps lit quickly and reliably!

    mes mailbox mod

    I'm thinking on drilling a single 1/2 hole in the front of my mailbox mod I'm putting together Friday. I don't want to have to deal with the amps going out during a smoke.
