    What temp were you smoking at?  What are you using to measure temp?  Sounds like you may have been smoking at a lower temp than what you thought or your meat probe is faulty.  Even without foil that sized chuckie shouldnt take longer than 7 hours or so at the absolute most to get to 195-200 deg.

    MES max safe temp?

    I use an auber pid with an rtd probe.  I started with a thermocouple model and did not have great luck with it.  The rtd probe is a bit slower to react to temp change (similar to my mav 732) but is much more stable and accurate.  I have smoked at 290 and did not have any issues i could see.

    Works over wifi.  Very easy to setup to view on your home network.  To view outside your network requires a bit more setup.

    This has been an issue from day 1 with all generations of mes smokers.  I think the rep was blowing smoke up your you know what stating they are working on a fix.

    Did you foil your chuckie during cooking?  I do not foil my pork butt's as i love the bark but it seems everybody foils their chuckie.  I am going to tackle a chuckie soon for pulled beef sandwiches and would love not to foil as long as the beef doesn't dry out by not foiling.
