Reversed seared some ribeyes tonight for the wife and I. Steaks were generously salted 4 hours in advance, rinsed, patted dry, a bit of evoo and then one was sprinkled with montreal steak seasoning and the other with simply marvelous cherry rub Smoked for a little over an hour with my auber...
What temp were you smoking at? What are you using to measure temp? Sounds like you may have been smoking at a lower temp than what you thought or your meat probe is faulty. Even without foil that sized chuckie shouldnt take longer than 7 hours or so at the absolute most to get to 195-200 deg.
I use an auber pid with an rtd probe. I started with a thermocouple model and did not have great luck with it. The rtd probe is a bit slower to react to temp change (similar to my mav 732) but is much more stable and accurate. I have smoked at 290 and did not have any issues i could see.

It's a foscam 8910 ip camera on the smoker. I generally use it to keep an eye on my dog while my wife and I are at work but it comes in handy with the smoker as well. You can view the cam via pc, android, or iphone and is a quick way for me to ensure my amnps is still smoking. As for the...
