    RE-SMOKING A SMOKED HAM (Q-VIEW ADDED)

A while ago someone posted about re-smoking a ham, with a twist.  He removed the skin and a lot of fat, which he than put on an upper rack to let the pork fat render down keeping the ham extra moist. Can someone post a link to that post?   I'm going to try to replicate his idea, and results...

I have a new smoker...don't know anything about smoking

WELCOME from SOUTH TEXAS, (down on the Coastal Bend by Corpus Christi) Something you might want to think about; Try cleaning as much surface rust off the outside of the smoker, treat it with a good coat of Ospho (?), than a couple coats of Rustolium paint.  That should keep your newly...

    Chipping Wood

Now that is an idea!  Most kegs are oak, and the flavoring from the wine kegs SHOULD be a plus, If you can find some old Jack Daniels kegs that would be NICE!! The thing about a chainsaw;  when I lived in Montana I went on a Buffalo hunt, (if you could call it that) and the on site butcher used...

    Herbs in the 'beercan' chicken

I've done several beercan chickens in the past, with Parsley, Sage,  Rosemary, Thyme,, and Lemon in the beercans.  No beer just water in the cans, just mix the Herbs into the water and SMOKE, they have all come out fantastic!!    Anyone else try any different Herbs or Spices?? Larry
