    Boston butt 4# HELP!!!

Glad it worked out. All the advice above was spot on. Don't feel bad about using the oven. When I have to have butts and/or shoulders done by a certain time, I'll smoke them for 8 - 10 hours and then cover with foil, pour in a little beer and stick it in the oven. I'll also do them the day...

    Smoked Salmon (Dry Brined)

That is beautiful. Nice color. I do a wet brine with kosher salt and dark brown sugar. I originally got my recipe from Burning Desires cookbook by the owner of Sante Fe chili company. He has a really good sauce recipe to go with it. Enjoy.l

    Smoked Corn on the Cob

Well, I smoked 8 ears of corn yesterday along with some bacon wrapped chicken thighs. I have to say the corn was good, but I didn't find it any better than my grilled. I think I'll stick with that, although if I'm just smoking, throwing some corn on wouldn't hurt. I made the chicken using my rub...

I've been grounded from the q

Damn. Sounds like you've got bigger problems than some idiots saying you can't smoke. A lock on the fridge!!! The day I start thinking about doing that is the day they would be leaving. I've been thru similar situations. In one case, with in-laws, we gave them a month to find a place and leave...

    Smoked Corn on the Cob

I grill it mostly but smoked sounds good too. Definitely clean off the silk and soak at least an hour or longer in cold water. We like it with butter stuck in with parmesan cheese and rosemary. yum. I'm doing chicken thighs with bacon this weekend and will definitely add some corn.

    PECAN WOOD

I use Pecan all the time. I prefer it to Hickory actually, although there's nothing wrong with hickory. I think pecan is not quite as acrid as hicory and also seems to not burn as hot. This is good for me. I've used it a long time with butts, shoulders, chicken, salmon and had great results.

    Your batting average...

That's so true. I have many years experience and there are some things like butts, shoulders, salmon that are homeruns everytime. Others, like chicken, are usually damn good but sometimes I think of ways I could do better. Others like ribs, mine are good and sometimes exceptional, I've found I...

    BBQ sauce

That's right. I make my own sauce and often use it to doctor up a batch of baked beans or a quick beans and dogs for dinner. Had many discussions on what BBQ sauce is best, who makes the best, what is the best secret ingredient, what's the best store bought, etc. etc. Mine is a tomato/vinegar...

    SMOKED LOBSTER!!!!!

I never thought of smoking Lobster before. What a great idea. May have to try that at some point. They aren't cheap around here. I do smoke a lot of fish though, Salmon, white fish (when I can get it), trout, oysters, and I just saw a thread about shrimp which I can't believe I haven't tried...

    Who makes the "perfect" biscuit?

Having lived in West TN, North Miss. and East TN. I am no stranger to biscuits. We even have a biscuit fest in Knoxville every year. My brother and I are in constant battle over who makes the best biscuits. I had an Uncle who made the best ones I've ever had and they did not rise as much as...

    Red's Smoked Garlic Butter Shrimp

That looks awesome. I will give it a try in the very near future. I agree with the head on but understand the wife issue. The nice thing about heads, shells and all is you can make a nice broth for gumbo and such.

Whats Cooking For The Holiday Weekend?

Gonna try those boneless, skinless chicken thighs wrapped in bacon. how can that be bad? Some cream cheese and a Vegan friend is coming over so I can smoke her some tofu and fruit. I give her a lot of grief but she is an excellent cook. May do burgers on Monday, don't know yet.

    Whole chickens advice

I tend to agree, I usually inject and add rub as well as a beer can. Personally, I like the way they stand there like little soldiers and it seems to allow for a more overall smoke. I found a great recipe for jalapeno/peach BBQ sauce in Smoke and Spice, that's very nice with chicken. I'm...

    Brian's Butt ... A beautiful thing.

My butts and shoulders turned out nice. Had some over easter with family, some this past weekend for a party and still have 3 bags in the freezer. Taking one bag to my cousins in Memphis over the weekend. Everyone seemed to like it. A couple of my friends couldn't stop eating and gushing about...
