    I own three of the four models of La Caja China, and have written two cookbooks based on these roasters. Obviously, I'm partial to 'em, but yes, they are a great way to roast whole pigs (and lambs, goats, briskets, shoulders, turkeys, chickens, etc, etc, lol) any time, any where. Happy to answer...

    chefrob, I had two recipes, one called for lard, the other for canola oil. I had the oil, and it seemed both easier and a but healthier, so I used that one. Turned out great. -Perry

    Brad, Thanks! I agree, the Model #2 is the way to go, or maybe the Semi Pro if you like the bling, and the spigot (which I do, lol.) As far as smaller pigs, I've had my best luck contacting local restaurant supply stores. Locally, I use Cash & Carry, but I'm sure there's someone like them in...
