    Have you seasoned your WSM yet? Search here in the forums if you haven't. Points to your brilliant buddies for the excellent smoker choice. Smoke flavor is a personal preference. Some like more some like less. Others like just a hint of flavor. Although the exact time is a never ending debate...

    Sycamore wood

    Plum is supposed to be good for anything, great for white/pink meat. Sweet and milder than hickory. No idea about sycamore wood.
