    Sous Vide Times???

Thanks! Been digesting tables 2.2 and 2.3 for about an hour now :emoji_laughing: . Still so much vagueness for me, but I'll have to get over that. To make sure I'm understanding the tables though...A 30 mm sausage (cylindrical?) thawed takes 50 min to get within a degree of my desired temp and...

    Sous Vide Times???

Thanks! And then will it stay at 151-152 forever if you leave it in longer, but lose texture?

    Sous Vide Times???

Wanting to get into Sous Vide cooking of sausages, chicken, and others, but how in the heck do I know how long it takes to cook something? The ranges I've seen for foods are extremely wide...2-4 hours, 3-6 hours...If I want a sausage to get to 152 IT and it comes out of the smoker at 125, how...

    Cable Railing

By the way I did probably 100' with 6 or 7 strands and it wasn't anywhere near $20K.

    Cable Railing

Yep. Did my deck at the Lake with Feeney railing system. The majority of the cost is in the connections from posts so the length isn't so much the cost, but rather how many end posts you have is where the cost comes in. The cable is the cheap part. It's a little pricey, but awesome to work with...

    Elk Summer Sausage smoking time

Your sticks look awesome. What's your process? I'd like to get that wrinkled look, but haven't been able to achieve it. Curious to what you do.

    Elk Summer Sausage smoking time

I'm about to smoke my first SS. I'm interested in your process for SV. I'm not experienced in SV so how do you know how long to SV it for? For example, if I have two chubs of SS and want them to get to 153 IT, how long do I set the SV for? Is it the same time regardless of volume of meat?

    New sausage stuffer

I have the Hakka 7 lb'er. Love it other than than the exit spout comes out the bottom leaving 1/4 lb or so of meat in it so I have to either use it for bulk or put it in my jerky gun to get one more link. Kind of a pain in the a$$, but it is made very well and a great deal for the price. Can't...

Time is running out - cheese

Checked after 3 hours and the cheese looked like it hadn’t taken any smoke. Installed the auber and have it at 50 F. Looks like that helped. I’ll let it go another hour now. Chamber was at 34 so I think that was too cold to take on smoke.

Thinking of getting a Chevy Tahoe

Check the under side for Canada trucks. They can tend to have a lot of rust due to the salts.

Time is running out - cheese

That was my next question. It’s 28 degrees outside now. Can it be too cold to smoke cheese?

Time is running out - cheese

Getting ready to do my first batch ever today. How big are your blocks of cheese? I was thinking of cutting mine down a bit before smoking. Also, is 1 hour of smoke the magic number?

Flat Racks vs Hanging for Jerky

I tried the variety pack of Hi Mountain, and much preferred the Hickory flavor over the others. It has the classic salt/pepper/hickory flavor that I like.
