    Hi DocAsherman, I am on the North side of H-town and know that there are plenty of people on craigslist selling several varities of wood on all sides of the city. I have a number for a guy on the north side but would be a long drive for you.

    I agree with Grillmonkey. Some will claim red oak is great with beef, and white oak with other meats, however, I have used both white and red oak on a regular basis and hardly notice much difference.

    Thank you old school. And yes CrazyMoon, although I have not made a bunch of these, this one was the most delicious one I have made. Probably because the misses put it all together this time, I just smoked it :)

    Love those pizza style fatties! This one had turkey sausage with cheese olives pepperoni, sweet onion, bell pepper, and sauce smoke with pecan for three hours.
