Curing involves salt.
But, does it need to be cured? How does she feel about the flavor of smoked pork bellies and fresh (not cured) hams? The seasoning can make quite a difference so the lack of salt isn't so noticable.
My sweetie needs low sodium, keep it under 2,000 mg per day due to...
One time when I asked about short ribs the butcher said that they would tend to have them more in wedding and holiday party season as they're trimmed off of prime rib. And those are served a lot more at that time of year.
But I've not seen a lot of choice in the last few years, especially...
"only" a couple of years? I've only been trying for a few months.
You know more than you think. Just because you don't know everything you want to, doesn't mean you don't know much. Does any passionate cook or chef stop trying new recipes, cuisines and techniques?
I need to find more...
To avoid blisters put on some medical tape when you feel it getting just a little sore. Not a bandage, just tape.
If the knife has a little ridge from the mold seam try sanding or trimming it just a little. Finger nail files/emery boards work pretty well.
You did a very good slicing. I'm...
I've been doing more chicken than pork also. Stores have it on sale for less. Got some for $0.59 per pound for thighs. I figure that after I de-boned, trimmed fat and removed about half the skin(s) it worked out to about $1.00 per pound. Although it was more work than Costco's $1.59 per...
That is a good idea, thanks for sharing. I don't mind using whats left in the angle part to fry up, but just getting it out of the tube is a challenge. Wet bread should be easier to rinse/soak out. Or for transition between recipes where you want to tell where one ends and the other starts.
Sounds like you've made good decisions. Enjoy and keep practicing.
Review for stuffing with the Kitchenaid attachment for others. It is quite annoying for me. The meat squeezes out around the plunger and when pulling the plunger back it suctions out. I got a lot of air bubbles. I got a 5#...
I don't have the smoke model, but have had a Thermopen for a while and really like it. I have the one with the light sensor so the backlight comes on when it is dim and The display auto rotates.
It really is instant read. When I'm checking the temp of meatloaf the temp will update as I move...
What kind of smoker do you have?
Keeping it out of the wind is a big help.
I wouldn't recommend fiberglass insulation, I'm not sure of the temp of the outside of the smoker and the safe temp limit. There is ceramic batt insulation, but more expensive and not very common to find in the...
Is crab apple the same as 'normal' apple wood for smoking? I have a neighbor that wants to take down a crab apple tree. If it is good I would ask him for some in exchange for some food.
I use oak mostly, mainly because I have a big pile of it leftover from installing red oak solid wood (unfinished) flooring. All those short off cuts and ugly pieces have gone to good use. I like it, but it is also what I am used to.
I got some cherry chunks from SIL when they had to take...
My sweetie has a few health conditions and hasn't been feeling well lately. So I've been doing a lot of cooking also. My freezer is getting kind of full. I do need to go visit Mom & Dad and will bring some to them. And for MIL, she is a always an appreciative recipient.
I'd email you all...
I like how you rigged the dowels for hanging. I was trying to decide how to hang sausage in my smoker without having to buy something. I have saws and plenty of scraps of wood I could use. Might have to buy some dowels, but those are cheap. Thanks for including the pics.
I want to do some...
We're just glad you managed to figure it out so you could roast it.
Let me know the next time you're going to roast a pig. I'll bring over some supplies and help out. For a modest fee.... Heck, I'll even bring my own beer.
Why use wire when sewing up the cavity? Have you thought about a heavy thread or something easier to cut? Heck you could even use small natural casings. They'd be edible that way. Check out upholstery needles for curved needles and ones with large eyes.
