What kit did you use? What plates did you use to grind? I've used the cabelas kits and Owens bbq kits with great success. We never had an issue with using either. We just made 25 lbs of jalapeño summer sausage using 15lbs venison and 10 lbs of pork came out awesome! They to were smoked on a GMG...
Same one I got! Yea I think it comes with a lil bag of pellets. Let you know Monday when it gets here. I've had the 6" tube for a while, I use it in GMG Pellet Smoker to supplement smoke for the first few hours.
I agree with ab Canuck. We process a lot of vension. I would buy a dedicated grinder and sausage stuffer . Cabelas has some decent deals right now. Their stuffer is on sale for 112. I love that thing. So much easier than using the attachments that come with the grinder
I would do a dry rub with tender quick but I don’t have a good scale to get the right amount of TQ. I got a lil over 10lbs slab from Costco. I have a gallon of distilled set a side for my ferments n such Ill use as I got a slab of loin for canadian bacon. Might as well cure em together

About to make some bacon and got to thinking. Does it matter what kind of water I use for pops brine? Last time I think I used water from the faucet and maybe used spring water the time before. Guess I’m second guessing myself for some reason.

Their stuff is really good. We have done the jalapeño summer sausage(was a little disappointed about the heat, lil weak) the chipotle lime jerky was really good. The parmesan garlic brats were awesome, we put pepper jack cheese in the mix, the maple breakfast we made into links was really good...
Looks awesome! Nothing like processing your own food! We did 25lbs of vension summer sausage the other day and did 12.5 lbs of vension snack sticks today.

Made 12.5 lbs of venison jalapeño snack sticks using Owens bbq seasoning pack. Breaking in the new smoker added to my arsenal. Got the Masterbuilt 40 w/ Bluetooth.
