    I leave most of the fat, rub with spog, cook at 250 and wrap and put in cooler for 2 hrs and they come out real good. I agree what one person likes another may not. Just have to experiment with what you like best.

    They are just set in there so you can adjust the gap to try and get an even temp all the way across.

    Looks killer! Isliced mine and seared it on both sides for about 2 min on a super hot charcoal grill and it was amazing!

    I just go by how much I think each person will eat and go from there. The wife and I have 3 teenage boys so about a 5-6 lber works for us

    Really nice smoke house man! I'd hinge that lid so you don't have to lift it and put a firebox rope sealer around it.

    Cool setup. I have a CaJun injector xl if something happens to it I'll trying this. If your having a heat issue you could put some holes in one side and a small computer cooling fan on the other to draw air in through the holes to cool it.
