Mine temp guage on the built in sensor has been off since the day I got it. It read about 20* warmer than it really is.
I've had 3 different probes in it at the same time and they all read lower than what the internal sensor says.
Once I figured that out, I now set my MES at 240-250. Not sure...

about 45lbs of corned beef (all from flat cut brisket, not homemade, packaged)
Was completely full, had it loaded 11 corned beef. Ended up smoking it for 14 hours, didn't open the door until I got them out.

Yeah, here's what I use, from a steamer set, there are holes in the bottom, lets the steam hit the meat. I usually steam it for 2-3 hours, and agree it's a good way to go!
WOW, I have that ECB propane smoker too and never though you could load it up like that.

I couldn't agree more with RdKnB. I've got the exact same smoker, but just two weeks longer. Done pork butt in the past and been in the same spot you've been in. Hungry people and meat not quite where you want it to be.

I hear ya mballi301. I'm a little worried about the rest of my stash. I did put it in the freezer immediately when I got home. The only difference I noticed was it was a bit saltier than the other brisket I had, which had the same expiration date.

They both look the same. I just got my ET-73 (the $35.97 direct from Amazon) on Friday and it works great.
Was a little worried about he range and figured I would have to mod it but worked fine through two walls of the house, no problems. I'd say get the cheaper of the two.
