    New MES 40 failure

Mine temp guage on the built in sensor has been off since the day I got it. It read about 20* warmer than it really is. I've had 3 different probes in it at the same time and they all read lower than what the internal sensor says. Once I figured that out, I now set my MES at 240-250. Not sure...

    Need Pork Tenderloin Recipe

I smoke a couple of loins with a modified version of this recipe: http://www.grouprecipes.com/36436/hi...pork-loin.html The very best part of it is the bacon soaked in real maple syrup! It was unbelievable! Didn't even brine it and it still tasted so good. Also have done this one...

    MES water retention

I've got my MES 40" filled full of pork shoulder. I think it's the amount and moisture content that makes the difference. I injected mine today. Noticed the window just dripping with water. Checked the tray and it was almost full in the first 4 hours. Also have water/juice coming out my right...

    Smoked corned beef

Yeah, here's what I use, from a steamer set, there are holes in the bottom, lets the steam hit the meat. I usually steam it for 2-3 hours, and agree it's a good way to go!

    First butt on the MES

I couldn't agree more with RdKnB. I've got the exact same smoker, but just two weeks longer. Done pork butt in the past and been in the same spot you've been in. Hungry people and meat not quite where you want it to be. Here's what I've found out, pulled is the easiest to do the day before, or...

    Scored some corn Beef

I hear ya mballi301. I'm a little worried about the rest of my stash. I did put it in the freezer immediately when I got home. The only difference I noticed was it was a bit saltier than the other brisket I had, which had the same expiration date. Thanks for the kind words everyone, this was...

    maverick et-73 price diff.

They both look the same. I just got my ET-73 (the $35.97 direct from Amazon) on Friday and it works great. Was a little worried about he range and figured I would have to mod it but worked fine through two walls of the house, no problems. I'd say get the cheaper of the two. *really wan't to...

What size is your favorite butt?

Usually get the 2-packers from Costco. They are boneless, and together they weigh in at 12-18lbs. Just did one (2) yesterday, it was the smallest I could find and it was 14.47 lbs. ended up getting a little over 12 lbs finished. Only four of us at home now, but the left overs and taking it to...
