    Started the smoker at 8 and put brisket and chicken on at 9 temp holding at 225.  I made a rub for the brisket using brown sugar, salt, ground pepper, and a few other spices.  For the chicken I used the Emeril's chicken rub.

    Was by my location Lowes store today and found 2 of the 20lb bag of Kingsford charcoal for 12.97  So I pick up 80lb should last a while.

    Small Prime Rib

    It only going to be my wife and I this year for Easter.  I pick up a 3 lb prime rib and wanted to smoke it.  I did one around New Year and it was great but it was a lot larger.  About how long will it take for a small one like this at 225.  Or would a small one like this be better off in the oven?
