That 321 sounds great for beef ribs! is there anything I can cook on the bottom rack of the WSM (as in another form of meat for 6 hours), at the same time as the beef ribs on the top rack?

Hi, looking at cooking some beef ribs in the Weber WSM!
the ribs are in a full primal about 40cmx20cm
how long will these take to cook! as its my first time will only rub with salt & pepper, any advice?
This will be my 4th cook on the wsm, but what do you cook on the bottom rack! all recipes...
brought my stainless steel injector, with 2 different size prongs! but it seems to clog up, all the time. unless I water the marinade down a lot! what size prongs should I be looking for?

Hi had the wsm now for 2 weeks and loving it! is there any recipes out there that take around 2 to 3 hours to cook! my first 2 cooks were 6 & 12 hours each! I find for the $699 that the wsm cost it should of come with a better book, with more cooking times and recipes! What is a good book to...

Thanks guys lucky I never sold the old girl! (Blue Weber Kettle)! I have noticed in some photos that people put pork in the wsm with the rind on! I did this last week but the rind came out like rubber! any idea what went wrong?
if I take the water bowl out of the wsm, can I use it as a normal weber? wife wants a pork leg with crackle! I can get the old weber kettle out! but can I cook meat on top shelf and vegies on bottom shelf or vise versa? thanks
2nd cook in the WSM. did a lamb shoulder, rub was garlic, oregano, rosemary & lemon! sat on 140F for 12 hours
tasted great, even wife liked it

Hi, been reading on your forum the last few weeks & took in heaps of info! could not work out to buy a cheap Komado or a wsm? but went the wsm way! had my second cook on it Monday! did a Lamb shoulder that turned out great (12 hours sat on temp the full way), much better then my first attempt...
