You can look at the metal tag on the back upper left of the unit and see what the watt rating is, the new smokers will say 1200 watt's. I have had mine for a few months now and have not had any problems, but I am usually around 235-245 deg. I am still adding chips about every 1/2 hour, but...
I have not tried injecting or brine yet. I figure I will try the brine and buy an injector sooner or later. Besides I just went to the store and bought some celery seed. I had no idea it cost that much, so I am hoping it helps the brine.
I just put water in my pan when I tried it.
I put the meat in the freezer for a few minutes after flattening it out in the ziplock bag. I then put it back into the freezer for a little bit after rolling it, but before I put the bacon/ham on it. Then on to the smoker.
I did a fatty with sweet Italian sausage and it turned out great. I could only find it already made into sausages, so I just split them and removed the meat.
It might not be too late. One of the ways I read to smoke them is to do it after they are hard boiled. Peel them and then smoke them for 20-30 min. I am going to try this method today and see how it goes.

So I had to order it, and as soon as I was done the wife walks in and says I am stinking crazy to pay for a recipe.

I actually tried making one of these yesterday, it turned out pretty well. I learned that you have to keep track of how much you try and put into a fatty if you want it to close
I also made a pizza fatty with sweet italian sausage instead of the mild, and I think I will have to try the lasagna...
Sorry to hear that, I just did a batch of beef short ribs and twice baked potatoes tonight and they were great. Mine is the newer version that just came out a few months ago.

Check Sam's website for other stores around you. I just looked at their site and they are not listed as an item for delivery, so unless you have a local store with one left you will have to look at other stores.
I got a 12x12 tile from home depot (ceramic) on sale for $0.57. I figured I would give it a try.
I just got 4 rack thermometers from sams ($1.88 each) so I am going to try again with and without the tile and see what happens.
