    I will cook collagen until its done in foil and spices, then take the meat out and finish it low and slow with a water pan steaming away. Depends on the cut for the collagen breakdown, but I just make sure its moist enough for that process, and follow up with whatever finish, bark or mop sauce...

    Yeah, my GB left and it was about 3 years before things settled into anything I would call normal. The first year, dont go canoeing without emergency tp on board. The binding effect of bile wont be present and fatty foods make your rear end an explosive device.

    I vote for the 22.5 wsm. The weber company has an entire gourmet lineup of woks, searing plates, rotisserie setups for the 22.5 kettles tha would be awesome to include for grilling duties. Best of both worlds.
