I tried cream cheese but prefer shredded cheddar and wrap the halves in a half-piece of bacon, securing with a toothpick.
The skewers above look like a good idea, however.
I half 'em with a sharp knife then use a teaspoon to scoop out the seeds, etc.

Have had a heck of time getting my Char-Griller up to temp with the side fire box.
This time, instead of going with charcoal and wood chunks, I started with charcoal and then added split logs. Made all the difference. Also found the stock temp gauge is way off so that will be replaced in short...
Put the top warmer rack back on but had to take it off again (with the grill hot) after I realized the rib rack was too tall.
Don't recommend making adjustments to a hot grill :)
