    Cellulose Casing Hot Dogs

I'm thinking about doing some skinless hotdogs and looking for suggestions and advice. Anyone that has used them, do they peel ok? Do they expand and retract with the meat? DO you peel them right after cooking, after cooling, or when ready to serve? Any other tips would be appreciated. Thanks.

Is there a good use for the Rind from Bacon That has been smoked

You can fry it and get puffs. Thats what I do with fresh. I have never smoked it tho.

    Question re: smoking fresh sausages

Not safe to smoke uncured sausage generally but if you get it up to temp within 4 hours and eat it same day I think it's ok. It has been for me.

    Spam "Korean War" Fatty

Ok so now I have seen it all! A spam fatty, that's creative. It looks great. I would tear that up. Does the kimchi taste fishy? I have been looking at making some lately but the squid aspect of it scares me a lil lol

What Do You Guys and Gals Think Of MSG?

Loves MSG. I think it brings out more flavor in almost anything. Everything causes cancer now... JS

    first time for me too

Can't go wrong with hickory and pecan. My favorites. I'm interested in how this turns out. I have read on here that it's not a good idea to smoke that type of cheese but I think it's worth a shot.

Everyone else is doing 'em, so...

Looks delicious for sure. As long as the bacon stayed on long enough to eat, thats all that matters. It's going to look like shit tomorrow anyway lol

Pops Breakfast Sausage! I promise I will not call anyone names when they use an Electric Meat Grind

I was thinking that jerky gun would work great for shooting out a roll but it's probably too small.

    Pizza Fatty (Q-view)

Looks great. I made pizza style a couple times too and my biggest problem was fitting all the ingredients in. There's so many "toppings" we want to put in.

Can't get smoker up to temp. Design problem?

I think the opening from FB to CC is stopping the heat from moving into the CC and also the distance between them is allowing a little room to cool.

    Easy Simple White Rice

I grew up never even realizing that people actually cook rice on the stove. Of course once I grew up I knew but as a kid all I saw was a "rice pot". Almost everyone down here has an electric rice cooker. Cajuns love rice. We use the microwave rice bowl usually for small amounts like 2 or 3 cups...
