    Laptop for Travel

If your tablet has Bluetooth then just get a HDMI adaptor to connect to the TV and stream. Cost maybe $40 or less.

Late to the party, save me a dram and a beer!

Makes sense now that you mention it. My thought process was the fatty point would hold up better through the smoking and steaming process but that flat would make a dang nice sammy too!

    Beef Tongue

@SmokinEdge Do you have a build post for your smoke shack? I see it in all your posts and it looks pretty nice!

    Beef Tongue

Another under-rated cut that's starting to get too expensive. Hell, ox tails at Costco were almost $12/lb last week down here!!! I'm definitely in for this one!!!

Late to the party, save me a dram and a beer!

As we all know, life gets in the way sometimes. I saw @thirdeye corned beef recipe in the past and I was waiting patiently to try it this year. Well, s*** happens (I was low on Cure #1) and now I'm looking at corned beef about a week or so past "The Day". All good. It's a meal that needs to be...

    Lumberjack Pellets

Another Lumberjack fanboy here. Other than a couple months where they weren't available locally, I've pretty much used them exclusively since 2019. I think my current batch brings me to about 2200-2400 lbs so far. I've never found a clump or had any issues other than the usual dust bomb at the...

    Mold on sausages

You might not get the visibility needed to answer your question properly in this sub-forum. From years of learning on here I can say that white mold isn't necessarily bad. You should be able to roll with it or you can wipe it off with some white vinegar. Lots of variables involved with your...

    Alert for Vacuum Chamber Users

When I use my Vevor chamber I'll stop the cycle if I see mist in the chamber or condensation on the lid. That's a sign your liquid is still a bit too warm. It doesn't only cause a mess in the chamber if the liquid is too warm but the moisture will also go in to the pump and contaminate the oil...

    Alert for Vacuum Chamber Users

They'll do cool/cold liquids very well. Warm to hot liquids, not so much.

    Fresh Pork Picnic

The fresh picnic has become my new go-to rather than Boston butt. I spend some more time picking out the larger fat pockets when pulling it but I find the flavor to be so much better. I like the different muscle groups it has. Plus the larger bones make for some nice soup!

    Seasoning packet, any use?

Redefining the "Everything Bagel" :emoji_thinking: The bean selection at my store was seriously lacking that day. The bag with the seasoning was cheaper and the beans were bigger, so I went with that. Not usually my first choice though.

    Seasoning packet, any use?

So I made some bean soup w some bones and meat I had left over from a double smoked ham. The only beans that were available had this lil nugget of heart attack wrapped in cancer included. Powdered ham flavor which I'll assume also has a ridiculous amount of sodium and fake flavoring. I didn't...

    Favorite cooker you own?

Looks more like "freezy peasy"! I miss that first morning of snow when everything is clean, pure, and beautiful. 4 hrs later I'm done with it all and ready to get back down South! I'm 100% with Doug. I'm a set-it-and-forget-it type of guy. The Camp Chef gives me the touch of smoke I like and...

Salumi Palooza Jan, 2025 (Culatello 2024)

@indaswamp You and all the others who do things like this regularly truly amaze me! SUCH a labor of love! I just spent like 5 hours making 10lbs of sausage. Granted, it's only my second time so I'm still in the learning curve for efficiency but.... You gotta love it to do it IMHO. The prep and...

Looking to tap into the Knowledge Base: Air Tools

0% smoking related but I figured I try to ask on here. Delete if it's the wrong place to ask. Do air tools (drill and impact mainly) work under water? I need to rebuild my dock. The water is down pretty good right now but by the time I rip out the old, draw up some plans, get material, and get...

How you know when you're officially OLD.

I said detrimental, not hard. I would never compare a desk job to manual labor. Both take their toll on the body but in different ways.

    smoked meatloaf

Smoked meatloaf changed my life. One of the most simple, most basic of smokes. And one of the most delicious. My first few were store bought from Publix. I don't buy them anymore because the last few were over-mixed leading to a tough, dense, chewy texture, but it's now the ONLY way I'll do...

How do I learn to be paitent

There's one secret to gaining patience. It will carry you thru life in complete and utter peace. I'll tell you the secret tomorrow :emoji_sunglasses::emoji_sunglasses::emoji_sunglasses:

How you know when you're officially OLD.

I navigated BOTH leg holes to my undies without injury. It was a good day.
