I reverse sear (sear after they are smoked) my spoon roasts and tri tips.. Never smoked a steak but I highly recommend smoked/baked potatoes!
And I don't know when you switch levels..
Turn on the sear grill and let it heat up for a couple minutes. Throw the steaks on for 1 min per side before going onto the medium heat gas grill for 5-6 min per side.. Gives them a great look and the charred taste that I like.
Steve.. I too, am an owner of the SH 4in1! My factory installed thermo runs about 15-20 degrees colder than my Mav reads.. Slide the grate from the top of the fire box onto the log cradle and stack your fuel on top of it. It allows for more airflow and gives more room for ash build up!

As far as meat goes, my local grocery store has alligator "nuggets"? and thrasher shark steaks right now.. I'm going to pick some up this week just to try them!

Just a tip - Be sure to chill completely before adding alcohol!! If you add the rum and grain alcohol to the boiling liquid, all the alcohol will evaporate very quickly and you will be left with a NA delicious treat..
Thanks for all the knowledge J.J.! I will try the toothpick trick the next time for sure. I will also go with the full 3-2-1. As far as the rub goes, I really laid it on pretty thick so I might just try "sprinkling" it on instead of laying it on so thick. I did notice that when I grabbed them...
