I smoke on an old weber kettle and I have tried green (apple) wood before.
I thought the beef I smoked is a tad bitter.
Pork and fish seem to smoke well with the green apple.
I have never had any problems with seasoned woods.

Just for giggles, I have soaked raisins in rum overnight.
Some folks might not enjoy a moist center to their pork loin.
