Prepped 4 pork butts last night and got in fridge at 1045. Checked fridge this morning and temp showing right at 40. Checked surface temp of butts with thermoworks probe by laying on meat and its showing they are 41 to 42. Are they still safe to smoke tonight? I adjusted fridge down further...
When I first started, I would freak at 230 (thought was way to high) trying to get 225 lol. I am much better now. I do try to keep below 240 but I don't worry to much. Just have to try for what you want, but be open to what it wants to do.
I have 2 clamp on 110 volt adjustable lights like on a drafting table that can move with extension cord and power strip (I can move them the way I want and they clamp to table/rafter/whatever I need). I use them with a led bulb that's equivalent to about 100 watts each (led is extremely low...

I have picked up pork butts and spoke to meat cutter that delivered them. They have not been frozen. So it's just freezing uncooked and then thawing to smoke, then to freeze until benefit and thaw and heat.
I have a question in reference to storing pork butts for a benefit. I have been asked to cook for a benefit for the brother of a local firefighter that will be in december. I was just informed that the pork butts will be dropped off tonight in a cooler from the person getting them. Can I...
2 racks of ribs Saturday day and 3 pork butts Saturday night to Sunday! Haven't had time this summer to do much smoking. Looking forward to this weekend!
