    Knoxville

Welcome to the fun. There is amazing information in here. Great recipes too. Good luck with your first cook. I also started slowly to concentrate on the process and fire management, BUT definitely brine/ marinate the chicken. I'm also a west side Knoxville guy.

Thanksgiving BBQ Biscuit Bombs and Sweet-n-Spicy Pork

Very impressive Chile. Huge props for your culinary adventure. Have you thought about sauteing the sausage slices with rub and butter before you wrap and smoke? Something to add dimension or complement the sweet. Regardless, well done. I'm always amazed at what a smoker can do in the...

Found Another BBQ Place in Dallas

I did clean my plate at Hard 8. I still liked everything, but I agree I was sad when I watched the meat cutters 'clean up' the brisket. One note of interest, I saw the meat crew adding rub on the foil as they were wrapping briskets. 1/2 rack pork ribs, 1/2 lb brisket, 3 shrimp poppers, okra...

Found Another BBQ Place in Dallas

Thanks for the insight. I board a plane for Dallas in 45 minutes. Any opinion of Hard 8 BBQ? I've been there twice to indulge my inner carnivore. There is an Arlington location & a Dallas area one. Hard 8 is similar to a Salt Lick.

    Brazillian Oak for smoking meat?

Were you running live oak or the Brazilian oak? I'm curious if there is a different flavor profile. Bourbon makers believe the different oaks should flavor differently. Plus, where is Brazilian oak available? Thanks

    Looking for knowledge

Hi 73saint! Thank you for reaching out. YES, good fire & temps are what I struggle with. My smoker temps swing wildly. The all 1/4" construction will help that? I am looking at the 48 patio. I will mostly be cooking at home, I was going without the warming box. I was going to get the...
