I agree with Geek with Fire. I had bad problems with keeping temps down and stable. No matter how I loaded the basket in the firebox it always burned out of control. I sealed up the firebox and all the issues went away. Was able to completely fill the basket and still good temp control with the...
Do you have a thermometer in one of the butts? Thawing out on the counter is not a good method. If any part of the butt gets above 40 during the night your in danger of getting people sick. The guideline is once the butt hits 40 you have 4hrs to get it the internal temp above 140 to avoid toxins...
Sounds like you are saying the chamber temp is only 166. That is a very large load in the MES, hope you get to temp ok. Don't open the door!!! Even when you reach temp, no peeking or those will take forever to cook. Let the temp go even higher, 260 or so if it will make it. Otherwise, your in...
Thanks again guys!
Pops...my Buddy next door has the tools. His son-in-law gave him the old arc welder and he doesn't really know how to weld either. Figured one of us should try and put it to use..lol.
I can light the box with a torch from the bottom grate or dump a chimney of lit coals in...
Thanks shawn...very happy with it :)
I did toss a some hickory in the chute with the charcoal. I'll need to play with amount and spacing of the chunks. There is also the option of adding chunks in the bottom of the firebox. The falling embers will get chunks smoking. I'll put chunks in the...
Well...here she is mounted. Still waiting on the 2" ball valve, should have it today I hope. I made a temp orifice out of some heavy duty foil..lol. Definitely needed some insulation to help the chute temp stabilize quicker. I gave it a quick wrap of fiberglass insulation and will do a better...
Thanks guys...
Got the doors, gaskets and latches on. Will take a few more pics tomorrow.
Now just need to figure out how this thing is getting mounted. Want to make it easy to remove in case I want to take the smoker somewhere. It's getting hard to lift, so has some weight to it. Also got...
Here's a pic of a 12lb brisket in a foodsaver bag. I make large bags and use them all the time to marinate larger cuts like ribs and briskets. Stuff the brisket in and add the marinade, pump just until the air is out and manual seal. Let it sit in the fridge overnight. Sometimes I'll inject some...
Dave's right, same principle as the Stumps. Doors with gaskets make it an air tight chute with a 2" ball valve controlling the air flow.
I'm hoping the 8x8 tube is large enough area to eliminate bridging. Stumps used a 6x6 tapered chute, the guys building the clones have been using the 8x8 and...
Wanted to try my hand at some welding, first time, so not the prettiest job..lol. A buddy of mine offered a free chunk of 1/4"x8"x8" tube and I figured why not make a gravity feed out of it :). Just hope the damn thing works ok :). I actually had a lot of fun with the torches and welder (old AC...
After almost 4 yrs in the freezer I would bet it won't be too tasty..lol. The fish will be pretty dehydrated and have a pretty poor texture. Give it a try, but toss on something else as a backup plan.
One issue that might pop up, the insulation in that unit may melt out on ya at 300, you may exceed that near the box. Also watch for the wall flexing or bending under heat around the firebox, might need more support. That might be a reason you have a seal issue. You may also need to add a baffle...
