If buying a steak or roast (cooking med/rare) I go choice, select is a noticeably tougher cut. I buy most meat at the wholesale clubs were the cost of choice is less than buying select at supermarkets.
I was thinking the same thing...save the money for other parts! Checkout craigslists for a free freezer or fridge. You could also put a wanted ad on Craigslist and you will get a bunch of responses for a large working or not freezer/fridge.
Aluminum will work fine, no health hazard unless your going to eat it...lol. Steel will hold the heat longer, but aluminum will heat quicker and more evenly.
Figure I'll toss this out there...lol. I'd like to trade for some pecan. In return, I can send an equal amount of either apple, cherry, hickory or a mix. Maybe a large flat rate box. Open for larger amounts too :). Anyone interested?

I put a gravity feed firebox on the smoker and a lot of ash (like kingsford level) can clog things up. Guess I'll keep going with lump :). Thanks again for the review.
When I had to use the MES in the rain, made my self an umbrella plant :).
Stood up a good sized umbrella in a flower pot filled with stone. Worked well keeping the rain of the smoker.

Seems the 30 would still have the advantage of cooking the meat faster. The meat gets all the heat it can absorb because the unit has recovered to setpoint and supplying more energy (heat) for the meat to absorb.
In the 40 the chamber temp is lower for a longer time...
