Nice plate Erain! We usually do the squash on the grill, but got me wanting to try it out in the smoker. That hunk of meat in the middle looks perfect .
I'd give it a good rub down with some evoo and lightly season. Your temps are right on, smoke at 250 and pull at 133. Make sure to rest it for at least 45min. 5hrs cook time sounds about right.
Not crazy about hickory on a beef roast, I use apple or cherry mixed with some mesquite. That will...
I'm about 30 mins away and planning to go, not competing, but never been to a comp before and wanted to see how they go. Maybe bump into some of you guys and say hi, let me know what teams you are .
Jeff...I put a wanted ad out on craigslist for apple and cherry wood.
Basically stated that I was looking for a small amount, maybe a small pile in the PU. Explained that I use it in my smoker and I was not a business. Willing to travel, cut and load it. Before I knew it I got a response with...

Make sure you get a choice ribeye, most supermarket cuts are select. Rub it down with some evoo, italian seasonings and garlic salt. Smoke at 240 until an internal temp of 133 and let it rest for 45min before cutting into it. I use cherry or apple with a little mesquite. Hickory is not my...
Hard to tell from the pic, but the guys are right about needing a gasket for the door. Is the insulation still in there, completely filled in between the walls? With that build you should be fighting to keep the temps down.
Can you describe exactly what problems with the temp and smoke your having?
I always thought it was cool that peeps liked my posts or help and recognized it, the only way they could, with rep points. I guess they meant something to me too :).
I'm surprised that when someone mentions the loss them, they get treated like they are whining and told that they meant nothing...
Same boat as you :).
In the first round crash I lost about 400 post, 500 rep points (now the rest are MIA) and lots of time spent on q view posts. All we can do is hope going forward things are a little better protected. Have more faith now with Brian at the helm.
