We do have some trout farmers in Wisconsin I'm not sure of the regulations. But there is a guy about an hour from home that is growing shrimp in a pole shed for about three-year's or so. North country shrimp in warehouser WI. I know that he raise them in swimming pools.

I think you have the right idea looks great. I only take mine to 130 to 135 but I prefer them at medium rare. You can also use a knife and cut slits in and stud with garil cloves and fresh rosemary. If you are doing the wrapping and tie don't be afraid to season the inside also.

I'm in Milltown about 3 hours north of you. I did a Google search for you, put in butcher shop portage WI. You have 2 in Rio. Johnson sausage shop Mark's meats. And Lodi meats in Lodi. Try one of those and see what you can find, if nothing else it will give you a nice road trip...
