$1/lb. whole loin roasts at HEB, how well do they smoke?

Actually, they are boneless rib chops, just not sliced up yet. Kinda like pork prime rib. If you want to help keep them moist, try brining them for about 4 hrs. after slicing the chops to 2" thick before cooking them...

Brined Vs. Un-Brined Chickens: A Taste Off!

I would suggest that perhaps the meat was "mushy" because it was brined too long. If you cut the time down to 6 or 8 hours, you may reduce this with no loss of juiciness. Mark

Grilling with smoke on Weber gas grill

Great tip! When you break it down, good BBQ comes from heat and smoke, both under control. Whether you are burning propane, watts, charcoal or wood, it's the control of these two things that makes good 'Q. Well done!

This food is seriously slow - must see

Although I have not done a whole hog, much less 8 of them, the methods seem tried and true and of a fine BBQ tradition. Isn't it amazing how the NY Times almost makes it sound like an aberration; like something from another planet? I guess they can' comprehend that there's a whole bunch of us...

    PID Temp Controller for MES

As notoriously quirky as the MES controller is, I'd be tempted to do this if I knew how.

    Awesome Price

I have *SO* seen that look on my wife's face before! She just called from HEB - they were just opening cases from a meat shipment. Unfortunately, the guy checked and they are $2.99/lb. Not for this dude. If they were a buck I would have just had him toss a case in her cart!

Would You Believe This Piece Of Crap?

I'd just ofer to advise them for free, just to support the art of proper BBQ. Once you ahve them purchasing and using the right cooker for their needs, you can offer to haul that old on off and not charge them. There's your next project!

    Awesome Price

Holy Cow! (or Pig) There's room in the freezer, so off to H.E.B. I go! This sale doesn't show up in their weekly ad - was it in your store only? As far as cooking them, there's really no end to the variety of the uses of these things. One of my favorites is to lop of the large end for a...

    Electric Smoker Suggestions

Another strong vote for the Masterbuilt MES. You really ought to use an external thermometer, though, as the built in one is notoriously off.

    Goat

With respect to alblancher, maybe it was the age of the goat or the ones cooking it that got you down. Down here, we mostly cook cabrito (young goat), as it is far more tender. After they get about 6 months old, it starts to get less so. Smoked cabrito has a taste somewhere between lamb and a...

    chili

Well, since someone revived this 18-month dormant topic, I'll toss my 2 cents in... CENT 1: Most authorities trace the dish we know as "Chili" back to Military plaza in San Antonio and the famous 'Chili Queens'. Here is a traditional recipe from that time, preserved in the Institute of Texas...

Look what the manmail just brought.

I first saw ZZ Top before they had released any records, just a random band in a small venue. I then saw them again in 76 in an outdoor arena in Phoenix. Both were great shows. Aerosmith I saw only once, in about 94. Killer show, and as I was single at the time, the audience was great fun too...

    LP Tank Score

Jerry, If you chop that bad boy in half, you could make a couple of really heavy duty vertical smokers out of it. One built-in for the back yard, and one for a trailer. Heck, you could sell one and cover your costs for all and pocket some $$$! Great Score!
