    Pretty similar responses. I don't foil, but I run them at 225 with an occasional spritz after 2 hours. They are done when they pass the bend test.

    My first question is 4.7 ounces of what? If you are talking Instacure/pink salt/Prague #1, I'd err on the side of caution and pitch it out. The potassium sulfite in a large conscentration is a know health hazard.
