    Charcoal, Electric, or LP????

    I have a MES, a stickburner and a charcoal smoker, and assorted other charcoal grills and a recently donated giant gasser. More and more I am becoming convinced that some version of a UDS is in my future. I am having to balance my cooker expansion with the maintenance of my marital status.

    Do you freeze trimmings for adding to sausage grinds?

    I save all my trimings and use them for whatever comes up. Often sausage, but for example I made a nice bunch of pork tips using nothing but rib trimmings.

    The amazing thing is that Bacon Salt is kosher! I have several different ones in my pantry. Now, for you hardcore bacon fans - you DO know about BLT, right? Heh heh heh... I am wearing one of their t-shirts right now!

    Hey RC, don't let that 'off' smell from the cryo ribs throw you for a loop. It is a byproduct of the packaging process. As mentioned above, if you pull them out and give them a good rinsing, the issue disappears. It in no way indicates that the meat is bad, and as a matter of fact, cryovac...
