    White Cloud...I used 50 percent venison, 50 percent pork, ground and mixed with Curley's seasoning, pressed into loaves, then smoked and sliced.. I believe Mossymo started a thread on this wonderful product....Thanks!

    Well, I finally made my first 25 lb. batch of venison bacon, and I can tell you folks, it won't be my last...It was very easy to make, it took minimal time, and the flavor is excellent! I am glad I ordered enough seasoning for a 50 lb. batch because I will be making more. It tastes wonderful...

    Gotta full smoker this weekend also. Doing a pork butt, 2 racks of ribs, a Buffalo roast, and a Elk roast. Temps outside are very nice, in the 30's....WooHoo!!

    GOSM in the cold?

    I used my GOSM last weekend and temps were in the single digits and I maintained 180 degrees and wasn't even to medium on the knob. Should not be a problem. Only problem I had were my racks were full and grease dripppings that didn't get caught in the water pan, seeped out the bottom and dripped...

    Just started my turkey

    I just did some turkey parts yesterday, but we had a balmy 15 degrees above zero, with 5 inches of new snow dropped on us...I didn't think of it till the end, but I sprayed apple juice on mine....seem to keep it a little moister and it browned up nice. I don't think you can go wrong with butter...

    Dripping GOSM...

    Thanks BustedLuck...the only thing I don care for is the mess it makes in the smoker and when it is below freezing all the drippings freeze on everything. I don't know why Great Outdoors doesn't have grease pans in all their models, not just the Big Block. Maybe I will have to patent something...

    As promised here are the finished q-views of my smoke session today. The turkey thighs turned out okay....the whole chicken smoked really well. I don't think the meat was in the brine long enough. The turkey pieces or the chicken weren't as juicy as I would have liked, but tasted good...

    Dripping GOSM...

    I have a 3405 BGW Gosm smoker. Today I had it loaded up with turkey thighs and my water pan wasn't able to catch all the drippings, hence, grease was dripping down front legs of smoker and onto the cement. This model does not have the grease pan, as the big block does, though I don't understand...

    Well, I stumbled out of bed this morning at 6:30 am to get my 25 lbs. of turkey thighs smoking. I pulled them out of the brine, patted them dry, laid them out on my racks, put a light rub on them, and put them in the smoker. I also am doing a small chicken as well.     I plan on smoking up 25 lbs. of turkey thighs on Saturday. I am predicting the temp will be about -2 degrees below zero at about 8:00 AM when I am ready to start. I am also thinking about going ice fishing on Sunday...the ice should be about 4 or 5 inches thick already...if thats tells you how...

    My hunting season thus far

    I shot this guy chasing a doe the day before Thanksgiving. He has 6 points on one side and 4 on the other. We also had 2 other doe tags and I am happy to say they are cut and frozen waiting to be made into sausage and other goodies. North Dakota had available something like 148,00 deer tags this...
