It's kinda crazy up in that part of Ca. I lived in the San Jaquine Valley for 13 years. That is a crazy state, got 2 kids there along with an ex. Wouldn't want to go back for anything, about the only thing I liked about the state was the tri tip, and the mountains.

In Thailand they have these little suckers about 1/4 - 3/8" long, that are HOT. When I first went to Thailand in 95, we would always gather around for lunch at these little diners similiar to Chris in Singapore. I took a big bite of this ground pork and about s#$%it myself. That was the end...

I think the oyster sauce might be the reason for the dark color. A lot of the Thai's use this as a main stay for their cooking and it does give the meat a darker color.
