Everyone seems to be doin rib eyes tonight so I thought I'd add mine to the heap.....lol
Smokin on the Traeger set at 450 degrees.
2- 1 1/4 lb each boneless rib eyes.
Using hickory wood and puttin on Cajun Injectors, Cajun Shake seasoning.
I will smoke these for 8 mins. on a side for rare. And...
I think you answered the question. "Wrapped in butcher paper, stored in the fridge". The butcher paper does not protect them from drying out in the fridge so they dehydrated. That would be my thought...

Must be the days for ribs, I see others doin them too. Got mine in the MES right now goin on almost 3 hours and gettin ready to foil....lol
And yes, they are smokin in the MES.....finally....
Desert, you need to check out these....Traeger smoker/grill.
You can do almost anything in these and requires almost no watching.....If ya have any questions just ask me.....I've had one for 3 1/2 years.

I'm thinkin about 1 1/2 to 2 hours time wise but that's only a guestimate.
You need to cook to a proper internal temp. of 165 to 170.
Always cook by temps. not time....Good luck!!!!
