I LOVE cheese, and this post is just torture. Those are beautiful, great job. Quick question; if you don't have a vacuum sealer can you use ziplocs to store the cheese?

I am by no means an experienced builder nor metal worker, but a few ideas come to mind and I'll share my thoughts.
Starting with the firebox, the charcoal does need to be up off the bottom of the tank. Reason is to let ash fall instead of smothering the coals, and allow plenty of air flow up...
I'm partial to vertical smokers, and yours is the best I've seen. I also love the 'pizza oven' idea. I'm going to try to copy that on a smaller scale while modding my smoker. Great job!

Those look great... I think you have the knack. It's also fun to try all sorts of other fillings and wrapping, including some without bacon! You'll love experimenting with them, and they taste pretty good too. Keep the qviews coming... we love new ideas.
