Water or NO water?
What I noticed with my offset smoker is water helps by keeping the heat down and does make a lot of steam. I use aluminum to catch drippings and I still need a bucket on my drain to catch the water/moisture from the water pan. It does seem to keep meat a little more moist. Oklahoma Joe's "Grill"
That's what I thought but it is a Oklahoma Joe's grill. It has the Oklahoma emblem with a serial number as well as the original Oklahoma thermometer. Would you have any ideas to clean the emblem? Need recommendation for a new smoker.
I have had the Longhorn smoker for about a year. I like it. After looking around touching and reading/viewing reviews I decided it was the best option. It is not heavy gauge steel like the older Oklahoma Joe's but it WAS the heaviest gauge currently being sold at local retailers in this price...- vegasrc1

Wood chips burn different than chunk. Like Chef Jimmy said, chips give off white smoke and in my opinion don't have the same flavor as splits/chunks.
