    My first ribs experiment...

Sage advice from the post's above! The other thing to remember is this is your third smoke with a new WSM If I read your post correctly. WSM's tend to be a little unpredictable until they are well seasoned. Also the 3-2-1 method is modeled for 225, make adjustments for 250 etc. I've had my WSM...

Anyone from the Vicksburg MS area to recommend local eats?

I've been tasked with completing a project in Vicksburg Mississippi and am hoping to find a few locals here to direct me to some of your favorite restaurants. I could care less about the chain restaurants, I'm looking for the hole in the wall Cajun/Creole and of coarse some delicious Q. I'll...

My first smoke ever - Pulled Pork on WSM 22.5 (w/ QView)

Here's a nice trick to help with the minion method. Cut the bottom out of a small coffee can, drill a hole in each side and install long wires as handles (I used rebar tie wire). Place the can in the center of the ring and layer your charcoal and wood chunks around it. Ten to fifteen lit...

Need help for buying a new smoker - Need to act fast

I have to agree with the above post's. I have a 18.5 WSM and love it! Once you figure them out its almost set it and forget it. The 22.5 is on my wish list but I've always managed to make the 18.5 work. I smoked 37lbs of pork butt in it this fall, it took 24hrs and I only had to add a few...

What got you folks interested/started on smoking....

I got started smoking truly by chance at least ten years ago. There was a BBQ joint near one of my job sites we would frequent once a week or so. They had a "questionnaire" to fill out and were giving away a 18.5 WSM. The questionnaire was mainly to get your e-mail address so they could send you...

37#'s of Pork Butt on a 18.5 WSM Qview

It's amazing how attentive the taste testers become isn't it! :icon_biggrin: thanks for the kind words guys. We will be enjoying this smoke all winter. Less what we ate last night and two small containers in the fridge, I ended up with 17- 1lb or so (3 handfuls) and 4 small packs for ABT's.
