    Has anyone built a Kirby type mixer or any home built mixer?  Question is the bevel on the blades - are they like a propeller or is one blade beveled up & the other side beveled down?  To push meat up one side & down the other as it spins.

    Pickled Sausage Recipe?

    Looking for a pickled sausage recipe.  I tasted at a party a number gears ago.  I was way better than the hot momas ya get at your local watering hole.  I believe it was a German type sausage cooked, cut in 1/2 - 3/4" slices the casing peeled off & the into the brine with some sliced onions

    When using jalapenos in summer sausage, do you use the ones from a jar or chop up fresh.  If fresh do you boil or roast them to bring out some heat?  Or does the heat come out from smoking & baking?

    Is there a rule of thumb on how much dry milk or even dry butter milk to use in summer sausage? Is more better - less doesn't do any good?   20# batch,  Is it also used in German sausage brats,ect.?

    Instacure#1 vs Prauge#1 vs Tenderquick

    The recipe was from before refrigeration & could have hung in the smoke house for a while.  Now we let it hang for a couple days in the frig, cold smoke, then bake in the oven up to temperature.  Tonight I'll post the recipe & you guys can pick it apart.

    For some reason our 100 year old summer sausage recipe uses the recomended amount of prauge#1 along with some tenderquick + salt.  Are we going the wrong direction?
