    Smoke looks pretty good to me I like heavy smoke myself. Offsets seem to be a bit temperamental in my opinion always tending fire I have an offset and tend it constantly

    I've used pops brine method several times. Inject plenty 14 days and smoke n eat best ham I've had ever. Gotta try Dave's too soon

    Tri Tip on my new kettle

    Looks great congrats. However I feel pretty stupid I've been queing for 30 or more years and tri tip is something I've never seen here in South Louisiana . Anyone else see them or am I looking in the wrong spot. Restaurant Depot Sam's club or other places I shop at I've not seen it

    I would say it's more of an indirect heat deal. And it does keep your smoker from large flare ups due to fat drippings. Just my 2 pennies
