    Rectec what's bad about them

Yeah, I'll bet with the drip pan out and grill grates in she should heat up plenty fast.  I only go hot to burn off the grates, I still have a Weber gasser for those high sears.  I, too, am surprised about the smoke.  I worried about that when I bought it, coming from a Smoke Vault, and used a...

    Rectec what's bad about them

You might want to call Ron about that hour to 450.  It was in the low 60s here last weekend when I started it up to clean the grates before a cook.  I set it to 500 and checked the clock, 30 minutes later I went out to see if it was hot enough to brush the grates, it was 490.

    CookinPellets vs. Lumberjack?

Thanks Red, I'll do that.  I like the CookinPellets but the only ones available are their hickory and perfect mix.  Lumberjack offers a large variety of different woods.

    CookinPellets vs. Lumberjack?

I've got a Rec-Tec and have only burnt CookinPellets in it.  I'm located about midway between CookinPellets and Lumberjack.  The Lumberjack are about $8 per bag cheaper.  I've heard good things about both, just wondering if anyone notices any difference.  It's about two hours for me either way I...

    Rectec what's bad about them

The powder coat is great, done very well.  The cooker is heavy duty, more so than even my Weber Genesis.  I had the cooling fan on my auger rub against the housing and stop the auger, that took about five minutes to troubleshoot and fix.  All solved on Memorial Day afternoon with a quick phone...

    Rectec what's bad about them

I think you'll be hard pressed to find many complaints.  I searched long and hard for negatives before I bought mine.  There was one negative on Amazon, his bitch was about too little smoke flavor which is subjective and easily remedied if you do want more smoke.  Like Red said, the quality for...

Thermapen - how did I live without this?

There are a few other brands but you won't go wrong with the Maverick either.  It will do both your food and chamber temp, plus the wireless capability is awesome ......... The ET-732 and ET-733 get really good reviews.

    Red skin potatoes

You should do fine with that, I used to make them on the grill exactly like that.  You'll have to open them up for a while though if you want to get smoke to them but they'll taste real fine even if you don't.  The meat should be just fine, it's just going to make dinner about an hour late.  ...

    Red skin potatoes

I'm sure a cake pan, pizza pan, iron skillet, cookie sheet with raised edges would all be fine ........ even a casserole dish or other oven friendly container.  Could probably fashion something out of aluminum foil to place them on, too.  When I use a casserole dish in the smoker I usually line...

Baby backs, Sweet Potato Salad w/Pesto

Made 3 racks of baby backs for Memorial Day, some sweet potato salad with pesto and Dutch's Wicked baked beans.  It was all a great hit with the guests.  Sorry Dutch, didn't get a pic of the beans this time, but as always, they were amazing'!  A good day!

    Dutch's "Wicked Baked Beans"

I really like the smoke, it's not overpowering or anything.  The more you stir, the more smoke flavor you get. You can leave them in as long as you want, I do them with ribs sometimes at 225-240 for six hours or so.  Even then we like them baked even longer the next day in the oven before...

    Corn

Too funny, I posted this yesterday and then Yahoo has this article about corn today ......... They're monitoring me, I just know they are!   Buttered Corn on the Cobb Butter, corn, they are both equally delicious. If you want the same punch of flavor, use bright spices like paprika, chili...
