A little different MES 40 smoke question

    How to get more smoke?

masterbuilt or MES does not recommend using chunks, probably cause they won't really fit in the hopper. Also try not soaking the chips, in order for them to start smoking they have to steam off the water first and thus it will take longer to generate smoke. And with how quick you took your pork...

    First smoke

Sorry to high jack the thread but thanks for the carolina sauce recipe , I've been looking for a new one and this might give the flavor I am hunting for. What do you usually do for a carolina style rub?  Also my wife and I like a tangy and kind of spicy carolina style so I will def. be adding...

    My first smoke MES40 gen1

Yeah the only reason I grabbed them was because I was short on time to really do a rub justice and let it work. Lesson learned though the wife thought they were too sweet. The funny thing was when the pones pulled out the remaining meat looked like a McDonalds rib which lol.

    My first smoke MES40 gen1

Turned out alright, they were not the best I have had but definitely way better than some of the ones I have paid for at restaurants.  The problem I ran into was they were over done. I did the 2-2-1 method at 225 since they were baby back ribs. I did not insert the meat temp probe since I...

    MES40 low temp question

Well found out the remote doesn't like the brick walls on my house. I adjusted the time with the remote to add some extra time (to account for a preheat) but I guess the smoker never got the message so I added the wood chips right before it was going to shut down. I figured this out becasue I...

    MES40 low temp question

Now I am really baffled. Went to pull the burnt wood out of the chip tray and nothing looked burnt or even singed. I smelled the wood so it must have gotten warm but never lit. I turned the unit back on to make sure the element is still working and moved the maverick temperature probe to about...

    MES40 low temp question

I put the maverick in the top left corner, as far away from the elements as possible, to see what the extreme  would be. Now after about 40 minutes the temp is back down to the 257* range.

    MES40 low temp question

The odd thing is once I added the wood chips it came up to 273 within 15 mnutes, It isn't billowing smoke so I would assume the chips are not on fire...

    MES40 low temp question

    MES40 low temp question

So this might be a silly question but I set up my MES40 and like most other people it seems to be about 20 degrees below what the smoker thinks it is, check with a brand new maverick, so my question is do you just adjust the cooking time and leave the temp where a recipe says? or if it is a...

Stepping up my arsenal…Graigslist find of the day.

I think 20 degrees must be the norm. I just set up my new gen 1 MES40 and it too is 40 degrees off.
