    Gotta ring in the New Year right! Did this 7.5#er yesterday in my MES 30. Rubbed with my own rub, smoked with maple and hickory.     To soak, or not to soak?

    soak wood chips before using in Mes30 or not? I haven't been.. just want to know if I'm missing out on something.

    Anybody have any recipes or suggestions with rumaki? Chicken livers  wrapped with bacon... I would like to smoke them. Any thoughts?

    Slather before Rub

    A lot of different places. Lots of books. Something about the way the oil helps breakdown the  compounds in the rub. I have used mustard and oil before, and I tend to like the oil better, but I was just curious of what others thoughts and experiences were.

    I have heard people use the mustard for a better bark, lets say on a butt or a shoulder. But I have also read that oil helps the rubs breakdown better.
