    I used to use a rub with seasoned salt, salt/pepper, garlic powder, onion powder, and celery salt. Real simple and the drippings made a fantastic sauce. All the seasonings were roughly equal amounts just shaken on. Try and save as much juice as possible as a base for sauce!!

    A buddy came over and we ground, mixed, and stuffed 5# of sweet Italian links and 5# of Jamaican jerk sausage. Both turned out nice.     Todd, that is a great explanation. It's like why does a pickup truck get better mileage with the tailgate up? Counter-intuitive, but physics rule!! Also, the pork isn't ruined - just different! It'll be great slow roasted pork!!

    Have you checked with Publix? They will bring in whole hog so I'm thinking they would bring in some pork belly if requested. I know some store, depending on the demographics of the neighborhood, carry fatback and such.

    True, but often "we" pick up paper products, juices, sauces, seasoning, etc. and they are taxable. If the membership doesn't automatically generate the tax exempt certificate then it won't be a problem. Both Sam's and GFS create the tax exempt form at checkout.

    Why cant i get a chuck roast to pull?

    Personally, I 'd go with letting it rest in the foil longer. Stick it in a dry cooler for a 2-3 hours. If it won't fall apart they, well, you can blame the meat!! Lowering your cook temp won't do squat except make the cook time longer. However, that's just my $.02 worth and YMMV!

    Here's some pictures from 2008. The large bush with imature fruit provided the seeds (previous year) for the pots. These pots were all given away and the large bush finally got nailed by frost. Hence the new batch of seedlings!

    Hotter than a jalapeno. Somewhere around 100-300K Scoville units. Up there with habanero but the fruit is sweeter and flavor nicer - in my opinion.
