I'm not sure. I was on walton's website and they have a graph that shows you what size tube you need for the casings. I was just going off what they had listed. I currently have 1/2" OD tube but I thought this would be to big for the 16mm casings...

Do you add fat with your meat when doing caseless sticks? I usually do 60/40 goose to pork. My concern would be the fat would just melt out of them even if I keep the smoker below 170.

Thanks. That is a good point. I have had some Ghost Pepper sticks from a store near Lake Erie before and they were outstanding. I have been trying to make my own but not sure what flavor to get. I have also had the tex mex and that was pretty good.
Do these turn out good? I have tried making sticks 5 different times and I cannot find anything I like. I usually make summer sausage out of my geese which turns out good. I just wanted to go a slim jim type snack stick. Though about just shooting them out of a jerky shooter and dehydrating them.
Update... So I decided to take a part my smoker to see if I could give it a good cleaning in hopes that it would help with my issue and save some money. I ran a thin piece of wire in all the openings that have to do with the propane and cleaned everything up. I assembled everything back together...

Thanks Wade... I guess my next question is would it make sense to just buy the AMNPS and don't worry about doing the mailbox mod or stick with the tube and do the mod? I don't get a chance to smoke a lot of meats but when I do I hate wasting the meat/time by getting that ashy/bitter flavor.
