    My plan was to get the brisket to 180* then wrap in foil, put back in smoker until 190*. The end (point ?) was pretty good though. I'll know now about giving myself plenty of time............ By the way, my dry rub is almost like Jeff's. Mine has one item in it he doesn't have & his has one...

    Since I can't open the link for trimming the point off.......I want to try what ya'll talk about...cube the point & put back on the smoker....that sounds yummie............but what happens to the rest of the brisket (slice it up after it "rests" ?)

    Thanks guys. As soon as I get the basket etc, I'll take some pics of my new smoker. No one has any thermo's to mount on the lid (Lowes/Home Depot/etc) around here & the place I need to check is closed for the Holidays until Jan 4th...but that won't stop me from doing some smoking meat.
