Trying my first brisket today 5-31-15

Ok guys here goes. A dedicated DOWN flow smoker. I burned the tanks last fall and have been itching to get started all winter, the weather has started to break and my business (seasonal) is slowly getting going so if I can't get it done in the next few weeks it won't get done any time soon...- scott s

Burning the compressor tanks for my Third build DISASTER
I am just starting a build that I had expected to start a few months ago but have finally got going and hope to finish quickly. Last fall I decided to burn the compressor tanks in advance so they would be ready since I didn't expect to get started until after the snow started flying. Here goes...- scott s

Down flow design help needed
Does anyone have any experience with a down flow system? I'm hoping to design a cooker that uses down flow where the heat and smoke are released in the upper third of the cook chamber and the exhaust is in the lower third of the cook chamber forcing the heat to flow down to cooking grates...- scott s
