Beef Brisket turned out VERY tough

You can't go by internal temperature, it is only a guideline. Use a probe to see if the meat is tender.  It should feel like sticking the probe thru a muffin or butter. The meat will go from being flexible at lower temps 120-140, to being stiff.  It will start to relax again at higher temps. I...

Ordered a new REC TEC today!

After you wrap, there is no benefit to leaving the meat on the RT. Wrap it and put it in the oven until you reach you desired temp. You can save pellets this way The probe method for doness might be a better way.

Slow down! Do 6-7 cooks to break it in and see how it seals up. You may have to adjust the original door to get it to seal good. There is always time to spend money, but why, if you don't have to.

Trying to decide between Yoder Y640 & Rec Tec

Call RT to get the details on the financing. There is a fee involved. It may be interest free but the fee increases the real price just the same. Also, the 30 day return only gets you the purchase price refunded. You still to pay the shipping both ways and package it for shipping.

The thermometers that come with smokers are notorious for being inaccurate. Have you checked it against a known good thermometer? You would do well to get an accurate thermometer.
