After you wrap, there is no benefit to leaving the meat on the RT. Wrap it and put it in the oven until you reach you desired temp. You can save pellets this way The probe method for doness might be a better way.

Slow down! Do 6-7 cooks to break it in and see how it seals up. You may have to adjust the original door to get it to seal good. There is always time to spend money, but why, if you don't have to.
you can check the accuracy of your thermometers by placing them in boiling water and looking for 212f (adjusted for altitude) and placing them in an ice bath and looking for 32f.
