I made a variation of the no-weld charcoal basket.......still uses the (ahem) "carriage" bolt feet....but no bolts to make the ring, and no wire to attach to the weber charcoal grate.
I know....I know......no pics didn't happen....I'll get some asap and get em on here.....

I'd probably smoke some of the wood by itself before adding meat....not sure what that "honey wine" will do in a smoker. Just so you don't wind up with a "burnt honey/sugar" taste on your smoke.....I don't know that that would happen for certain, but, a chunk or two of wood and some charcoal...

couple more days of rain like today, and ALL the snow will be gone!!....it's already almost gone here in the middle of the state....Northern part still has plenty on the ground tho...(they can keep it, too...)

I'm partial to red oak mixed with cherry on pork. Did a brisket a while back using 1 part mesquite for every 2 parts apple.....that was an awesome flavor combo!
Just play around with the different mixes....I try to not use two of the heavier woods together (oak, mesquite, hickory...
you could always dry some out "Richtee-style"....I recall seeing a post where he dried/cured some wood chunks in his smoker....and got rid of some crappy Cowboy lump charcoal at the same time.
Best advice I can give you is to get it split to sizes you want to use and stack it so it will get...

I can't say that it added a LOT of coffee flavor.....I'm going to try this again with some modifications....and a different mop.....probably Guinness Draught....we'll see if it makes any difference. I liked the other rub better.
