Sounds good to me, erain!....I love portabellos....they're sort of a "meaty" mushroom, if you will. They stand up well to various types of cooking without turning to mush.

I believe that's what that "junk" is...cartilage. I trimmed my first batch of spares and came up with the same thing....little bits of leftover cartilage on the ends of the bones.
it's not really a big deal to me whether trimmed or not....last batch I just took a few stray bits and pieces off...
It might affect them a little.....I did 3 racks of spares yesterday and purposefully held the temp right around 200 for the first 3 hours...I feel it give better smoke penetration initially.
Foiled for 2 hours and only bumped the temp up to about 230.....last hour same temp.
They came out...
What about your thermometer....??
Are you sure it is accurate? A digital probe will be much closer than the factory provided thermo. Even a regular oven thermo will at least give you a comparison reading of your cabinet temp.
With a good flame, I just can't imagine that you can't get past...

interesting idea......might dry them more tho. I'm doing some untrimmed spares today....going 3-2-1 on 'em. Haven't really been pushing the temp for the first 3....200-225 is all.
Great advice, luv2camp....one thing I would add from my years in the restaurant biz.....and, I'll prolly catch h e l l for saying it....hire attractive, personable waitstaff and teach them to really take care of their customers.
I know it's not PC to think like that, but, seriously....nobody...
Excellent score!! I have access to a pretty good supply of wild cherry, too and LOVE the stuff!!
Nothing better than sitting around the smoker with a cold one and catchin' a whiff of that sweet cherry smoke.

It's entirely possible that the gauge is off. A lot of the thermos that come from the factory with smokers are off by a few to well over 100 deg.
Best bet is to check with a digital thermometer.
If it is running hot, there are a couple threads on here where someone added a needle valve to...
A UDS is an Ugly Drum Smoker.....basically it's a 55 gal. barrel turned into a vertical smoker...very, very efficient....16+ hrs on 8-ish lbs of charcoal.
I have my drum....just need to get parts together for the build...
