What temp do you need for summer sausage? I feel like my recteq 700 is plenty low for what I do but I’m not smoking sausage. I cooked 3-2-1 ribs yesterday on low for the first 3 hours per an online recipe and they didn’t get tender enough in the first stage.
Grits are fantastic if they’re made correctly. Properly seasoned creamy grits are great but unfortunately most places, especially breakfast restaurants, serve them bland. I like to add cheese or stewed tomatoes or both. Lots of pepper. Never tried smoked grits but I will now.
I semi-retired my mes-40 for a recteq 700 and couldn’t be happier. I lost two butts and a brisket one night in the mes when it shut down one night. That pushed me over the edge to buy a recteq with wifi alerts. Just cooked two butts and a brisket yesterday in the recteq and they were fantastic.

I have a 700 and not 590 but the basics of why I like it are the same. Good smoker that maintains a steady temp. I’ve had some probe issues also and the smoke flavor is not as strong as wood chunks on my kamado Joe. But I use the recteq for quick weekday meals and the kamado Joe for the weekend...
Looks really good! Has anybody tried making a Keto/low carb version? Obviously the rice is an issue that we can work around but I'm more curious about skipping/substituting something for Flour in the Roux.
I have a 700 and love it. Glad the 1250 wasn’t out when I bought or I would have wanted it. I have a kamado Joe also and love it but we use the rec teq for the quick week night meals. Not as Smokey as I like but it puts out good food.
My wife keeps saying that and she’s right but it still sucks when it was $15 a pound not long ago. I live in the coast and have access to catch my own but it’s a pain to pick out all that meat.
We made crab cakes about twice a month for a while. The whole family loves them. I was buying crab meat at $15 a pound and cringed then. We kept buying until it hit $22 and then I had enough. It was $27 last time I priced it. Way too pricey for me.

I have a kamado Joe classic and love it. I priced and compared to big green egg and at the time with everything included it was a much better deal. Recently bought a rec teq bull and haven’t used the kamado Joe as much but it’s more of a convenience thing than anything. I still love the Joe.
